Cream Dream Date
Indulge
in this absolutely divine combination of
chocolate, coconut, dates and nuts.
1 1/2 cups chopped
and pitted dates
1 3/4 cups water
1 t baking soda
1/3 cup butter, room temperature
1/3 cup sugar
2 eggs
1/3 cup flour
1 t baking powder
1 box Romany Creams,
crushed
1/2 cup chopped nuts
1. Preheat oven to
350 C.2. Place dates in saucepan and add
water. Bring to a boil. Add baking soda
and remove from heat. Let stand for 5
minutes. Blend mixture until smooth and
set aside. In a small bowl, sift
together flour and baking powder. Set
aside. In a medium size bowl,
cream together butter and sugar. Add 2
eggs, one at a time, mixing well. Add
flour mixture and blend till smooth.
Fold in crushed Romany Creams, chopped
nuts and then date mixture. Pour into a
greased bundt cake dish or 9 1/2"
round cake dish. Bake for 30 minutes or
until skewer comes out clean. Let
cool. Make the following sauce to
drizzle over cake before serving or you
can simply top with fresh whipped
cream..
Sauce:
1 cup brown sugar
1/3 cup butter
1 cup heavy cream
Bring all three ingredients to a boil
and simmer for 3 minutes. Serve warm
over the dessert.
